Eggplant Wedges


I love potato wedges, I really do. However, I could do without all the carbs. So I came up with Eggplant wedges. You're probably skeptical right about now onto how they taste like. They taste FANTASTIC. If you can't take my word for it, try it yourself!
This is a healthy alternative without sacrificing the taste. 


You will need: 

 1 large eggplant
1 cup buttermilk
Your favorite seasoning. I used cayenne pepper, salt, pepper, 1 clove of garlic, and jalapeño peppers (crushed) - Be your own boss. 
1/2 cup All purpose flour (APF)


salt and pepper for seasoning the APF. 
2-3 tbsp of oil for shallow frying

 Method: 

Cut the eggplant into wedges (about 1/2 or 1/4 inch thick)
marinate the wedges in the buttermilk and seasoning mixture for at least four to five hours. I did it over-night. 
Next morning or afternoon, just dip the wedge in the APF mixture and place them on the oiled hot pan or skillet (medium heat).
Let them cook for three mins on each side. Serve them hot, and enjoy. Easy enough, eh? 
This can be served both as a side and an evening snack:) 

P.S: If you're wondering what that sauce is, It's just what I like to call my "hot and sweet sauce". Just like the name suggests, it's three tbsp of hot sauce, and 1 tbsp of honey mixed together with a dash of pepper".
